Add the Yorkshire pudding mix and two medium eggs to a bowl. Whisk until the yolk has split. Add water and continue to whisk for 3 mins until smooth and transfer to a pouring jug.
Add desired amount of oil (1/2 to 1 teaspoon) to each well of your Yorkshire pudding tray and heat for 10-15 mins until very hot.
Pour the batter into between 1/2 to 3/4 of each well and cook for 15-20 mins (until golden). Tip: make sure to keep the oven door closed whilst cooking.
Remove from the oven and serve.
